There’s something about fall weather that makes me think about chili. Chili is also one of my favorite comfort foods. We do occasionally make a meat chili in a crock pot, but for a quick and easy meal or side dish, I love to make this vegetarian chili.
Ingredients:
1 can of chick peas (I love Goya!)
1 can of corn
1 can of black beans
1 large can of diced tomatoes
1 jar of salsa
1 tsp chili powder
Directions:
Combine all ingredients. Bring to a boil on medium heat. Simmer for 10 minutes.
Serve and enjoy! You can top it with cheese if you like. I like to eat it with macaroni and cheese or on top of hot dogs!
